Perfect Peach Crisp a la Mode

What You Need for Innards:

5–6 large, ripe summer peaches (pitted and cut into small chunks)
1 delicious lemon, juiced and zested
¼ cup brown sugar
3 tbsp. all-purpose flour
2 tbsp. sugar or substitute
½ tsp. vanilla extract
Pinch of salt (kosher)

What You Need for Topping:

1 ¼ cup all-purpose flour
½ cup rolled oats
½ cup brown sugar (tightly packed)
½ cup granulated white sugar or substitute
1 ¼ sticks of unsalted, organic butter (cut into small pieces)
½ cup almonds or pecans
2 tbsp. water
Pinch of salt (kosher)


Go ahead and preheat your oven to 350 degrees Fahrenheit and then throw your innards ingredients into a large bowl. Divide your mixture evenly between your ramekins. Run all of your toppings ingredients (minus the water) through a food processor on “pulse” for about 45 seconds. Add your bit of water to form a clumpy, crumbly dough and then top each ramekin with your pre-mixed topping. Place on an oven-safe tray or dish and bake for about 25 minutes, topping it with delicious vanilla ice cream when you’re done.

What You Need:

1–2 of your favorite summer fruits
Granola chunks or flakes
Vanilla or Greek yogurt
